  • Grape Variety: 100% Nebbiolo

  • Soil: limestone - marly - sandy

  • Harvest: end of September - beginning of October

  • Vinification: spontaneous fermentation with indigenous yeasts in stainless steel at controlled temperature. Spontaneous malolactic fermentation. Submerged cap for greater extraction of aromas, structure and colour for about 20 days.

  • Ageing: after racking, in spring it is placed in 20 Hl Slavonian and French oak casks for about 7/12 months. Resting in stainless steel tanks before bottling in late summer, depending on the favourable moon.

Since 2022, I have been able to vinify the two Nebbiolo plots separately. Decidedly more austere, round and full-bodied, the Nebbiolo comes from the sunniest area above my house!
