Fermentation: Early manual harvesting of the grapes, spontaneous fermentation with indigenous yeasts in temperature-controlled stainless steel tanks.
Second Fermentation: in the bottle for 12 months and rest for 2 months in the bottle after disgorging.
It is produced using grapes from the first thinning, when the sugar level is not excessive and acidity is the predominant characteristic.
